Yah punjab me banaye jaane wali favorite dish me se ek hai. Pindi chhola khane me bahut tasty hota hai aur ise banana bhi bahut asaan hai. Iss dish me kai tarah ke khushboodaar masalo aur anaar dano ko mix kar ke banaya jata hai. Jiski wajah se iska taste do-guna badh jata hai. To phir aayi jante hai ki pindi chhola kaise banaya jata hai.

Ingredients :

  • Kabuli chana – 2 cup
  • Chai patti (tea leaf) – 1 chhota chammach
  • Laung (clove) – 6
  • Daalchini (cinnamon) – 2 tukde
  • Chhoti elaichi (cardamom) – 5
  • Badi elaichi (black cardamom) – 5
  • Adrak kasa hua (ginger) – 1 chhota chammach
  • Tezpatte (bay leaves) – 3
  • Hari mirch (green chili) – 3
  • Haldi powder (turmeric) – 1 chhota chammach
  • Anardana pisa hua (pomegranate seeds) – 1/2 bada chammach
  • Kasuri methi (fenugreek) – 1 chhota chammach
  • Ajwain (carom seeds) – 1/2 chhota chammach
  • Lahsun (garlic) – 5 kaliyan
  • Imli ka guda (tamarind pulp) – 1 bada chammach
  • Kala namak (black salt) – chutki bhar
  • Namak (salt) – as required
  • Laal mirch powder (red chili powder) – 1 bada chammach
  • Dhaniya powder (coriander powder) – 1 nada chammach
  • Jeera (cumin) – 1 chhota chammach
  • Oil – 2 bade chammach

Method :

Kabuli chana ko raat bhar ke liye bhigo kar rakhe. Cooker me kabuli chana aur paani dale. Ek chhote suti kapde me chai ki patti, laung, daalchini, chhoti elaichi, badi elaichi aur tez patte baandh le. Isme namak dal kar cooker ka dhakkan laga kar ubaalne ke liye rakh de. Siti aane ke baad ise 30 minute ke liye dhimi aanch par ubaale. Cooker khool kar isme haldi, dhaniya, jeera, laal mirch, anaardana aur kasuri methi dal kar milaye. Ek pan me oil garam kare. Isme ajwain, adrak, lahsun wa hari mirch dale. Chhole wale mishran dale. Kala namak, imli ka guda dale aur garmagaram serve kare.
