 Gulab Jamun Recipe (गुलाब जामुन कैसे बनाये) :

Jab mithe mein kisi dish ka naam aata hai, to wo hai gulab jamun (गुलाब जामुन). Gulab jamun India ki traditional recipe hai. Jise log kisi festival, shaadi ya kisi special occasion par banate hai. Lekin kai baar aisa hota hai, ki hamare paas mawa aur khoya maujood nahi hota hai. Isi liye aaj ham aapko batayenge ki kaise aap ghar par hi bina khoye aur mawa ka gulab jamun bana sakti hai. Gulab jamun ki recipe ko banana bahut hi asan hai aur yah khane mein bhi bahut tasty hota hai.

Ingredients :

  • Milk – 1/2 cup
  • ghee – 1/4 cup
  • Milk powder – 1 1/2 cup
  • Sugar – 3 cup
  • Paani – 200 gm
  • Kesar (saffron) – thode se
  • Gulab jal – 1/2 chammach
  • Elaichi powder (cardamom powder) – 1/4 chammach
  • Maida – 4 bade chammach
  • Baking powder – 3/4 chammach
  • Milk – 2 chammach
  • Ghee – deep fry ke liye
  • Paani – 3 chammach

Method :

Mawa banane ke liye :

1: Sabse pahle pan mein milk dalen, ab isme ham ghee dalen ge aur ab milk powder dal kar achhi tarah se mix karen ge. 

2: Gas ko chalu kare aur us per milk ke paste ko 4-5 minute tak medium flame par lagatar ise chalate hue pakaye.

3: Jab aap dekhen ge ki yah mawa jaisa ban gya hai, to ise nikal ker alag rakh de taki yah thanda ho jaye.

Chashni banane ke liye :

1: Pan mein sugar dalen aur ab isme paani dalen ge. Ise tab tak pakana hai jab tak chini achhi tarah se paani mein na ghul jaye.

2: Flame ko slow he rakhe aur ise tab tak pakana hai jab tak chini ghul na jaye.

3: Agar aap chashini ka color achha chahti hai, to isme 2 chammach milk dal den. Ise achhi tarah se mila denge.

4: Ise 2 minute tak ubaalen ge. Jab milk phat jaye, to isi kisi chhalni se nikaal denge. Aisa ham iss liye karen ge taki chashni achhi tarah se clean najar aaye. Lekin gas ko off nahi karen ge. taki chashni pakti rahe.

5: Ab chashni mein kesar, gulab jal aur elaichi powder dal kar achhi tarah se mix kare ge. Ise 2 minute tak pakayen ge.

6: Jab chashni achhi tarah se taiyaar ho jaye to gas ko off kar de aur ise cover karke rakh de. Taki yah thanda ho jaye. 

Jamun banane ke liye :

1: Ab ham mawa mein maida dal denge, elaichi powder, baking powder dal kar in sabhi ko achhi tarah se milayen ge.

2: Isme 1/2 chammach gulab jal dal de aur 3 bade chammach paani dalen. Ise achhi tarah se mix kar de.

3: Ise kisi bade bartan mein nikaal kar 3 se 4 minute tak achhi tarah se mix karen ge. Taki yah atte jaisa mulayam aur chikna ho jaye.

4: Ab ham ise chhote chhote tukde mein divide kar lenge. Ab ek tukda le kar use dhire dhire hatheliyon ki madad se gola shape denge.

5: Isi tarah se baaki ko bhi gola gola kar de.

6: Ek pan mein ghee ko halka gunguna kar denge aur usme jamun ko dal denge. Ise chalate hue 10-12 minute tak fry karna hai.

7: Jab iska color pink ho jaye ga tab ise nikaal lenge.

8: Ise jaise hi nikalenge ise turant chashni mein dal denge.

9: Ise achhi tarah se chashni me dubote jaye.

10 : Ise 2 ghante ke liye isi mein chhod denge.

Note :

1: Ham isme dairy whitener ka istmaal nahi karen ge. Isme sirf milk powder ka hi istmaal hoga.

2: Milk ke paste ko lagatar chalana hai, nahi to aapka mawa jal bhi sakta hai.

3: Jab bhi gulab jamun banaye to uska chashni jyada banaye. Taki chashani gulab jamun ke ander tak chala jaye.
