Eggless Fruit and nuts cake recipe :

Bina egg ka bana yah cake sab ko bahut pasand aayega, iss cake ki khasiyat yah hai ki isme pade dry fruit aur nuts iss cake ke taste ko aur bhi jyada yummy aur delicious banata hai. Yah cake bachcho ke saath-saath bado ko bhi bahut pasand aati hai. Aap bhi iss cake ko apne ghar par zaroor try kare.

Samagri :

  • Maida flour – 1.5 cup
  • Sugar – 1/2 cup
  • Milk – 1/2 cup
  • Butter – 1/2 cup 
  • Condensed milk – 1/2 cup
  • Tutty frutti – 1/2 cup
  • Kaaju (cashew) – 1/2 cup
  • Akhrot (walnut) – 1/2 cup
  • Kishmish (raisins) – 1/2 cup
  • Badaam (almonds) – 1/2 cup
  • Baking powder – 1 tbsp
  • Baking soda – 1/2 tbsp

Vidhi :

Sabse pahle badaam, kaaju aur akhrot ko chhote-chhote pess me kaat le aur kishmish ko kisi kapde se saaf kar le. Ab maida me baking powder aur baking soda mila de aur use achchi tarah se chhaan le. Ek bowl me pighla hua butter, sugar, condensed milk mila de aur achchi tarah se mila le. Jab yah mishran fula hua dikhaye dene lage to samajh jaye ki mishran achchi tarah se mil gaya hai.
Ab taiyaar mishran me adha dudh dalen aur phir se phent le. Uske baad mishran me adha maida dalen aur phir se phente. Phir ek baar bacha hua dudh dalkar aur phir ek baar bacha hua maida dalkar mix kar le. Uske baad kate hue dry fruit, kishmish aur tutty frutti dalen aur achchi tarah se mix kar le.
Ab oven ko 180 degree Centigrade par preheat kare. Uske baad cake banane wale bartan ke undar oil lagaye. Phir us bartan ke tale ke size ka ek butter paper kaat kar uski satah par rakhe aur usme bhi oil laga de. Aisa karne ke baad bartan me taiyaar mishran dal de aur use oven me rakh kar 180 degree Centigrade par 25 minute ke liye set kar de.
kuch samay baad oven ko khol kar dekhe. Taiyaar cake halke bhure rang ka dikhna chahiye. Agar aap ko cake taiyaar lag raha hai, to usme knife dal kar dekhle. Agar knife ko bahar nikalte waqt usme thoda cake chipak jaye to cake ko phir se 10 minute ke liye paka le. Cake puri tarah se bake ho jane par use oven se nikalkar thanda hone ke liye rakh de. Cake thanda hone par ek tez knife ki help se cake ke chaaro or ghuma kar use bartan se alag kar le aur phir bartan ko palat kar cake ko nikal le.

In English :

Method :

Finely chop cashew nuts,walnuts and raisins. Remove the stalk of raisins and clean with a cloth. Add baking soda and baking powder in maida flour and strain it twice with help of a sieve. This makes all ingredients blend nicely.
Now take melt butter, powdered sugar and condensed milk in a big bowl. Mix all ingredients really well. Whisk until mixture appears to be puffy. Add half of the milk in the mixture and mix well. Now add half of the maida flour and mix nicely. Also add rest of the milk and maida and whisk the mixture really well.
Now add chopped dry fruit, raisins and tutey fruity and mix all ingredients nicely. Batter for making cake is ready.
Preheat oven at 180 degree centigrade. Grease the container with butter or ghee from all sides. Place a butter paper at the bottom of the container and grease it as well. Pour the cake mixture in the container and pat it on surface so that the batter gets even . Place the container in oven and set the oven at 180 degree centigrade for 25 minutes.
Check the cake after 25 minutes. Cake has not turned brown yet, bake it for 10 more minutes. Check the cake now. For this insert a knife, if it comes out cleans then the cake is ready and if the batter stick to the knife then bake for 10 more minutes.
Keep checking in the same manner and bake the cake. It takes 40-50 minutes for baking cake completely. When cake gets frigid, run the knife all around the container so that it gets separated easily. Place a plate on top the container and flip it. Cut into favorite shape or size and enjoy eating. Store the cake in air tight container in refrigerator and enjoy eating for 3-4 weeks.
